Lazy Sunday...

This has been a harder weekend for me, but I'm feeling better today and am going to start out my day by doing some meal planning. I ate some extra's that I don't normally have all in one day, so I dipped into my flex, but being that it's that time....I think I kept things in check.

As some of you may know, I have stopped purchasing all the 100cal. snacks, cookies, crackers etc. I used to mass consume. I rarely buy anything highly processed and try not to use too many pts on empty calories but we gave these pringles select a try, and I have to say they are pretty good if your really itching for a chip like treat, occasionally.
You can have 28 of this flavor for 3pts. That's decent!

I also bought a rice cooker! I've wanted one for such a long time,but thought I'd save the money and cook it on the stove. That is until I learned that you can cook pretty much any and all grains in there too!! I used it last night and I love it!! I will use up the rest of my processed Bistro rice but I won't buy anymore.....it makes perfect rice in no time! Next....I shall retry making the quinoa that went wrong on the stove....This machine even has a 15hr delay on it. I love it!!
Here was yesterdays meals:

Egg beaters w/green onion, green pepper, mushrooms, 30g cheddar.2pc high fiber toast, hashbrowns and 1 coffee
Lunch was 2 whole wheat waffles, 1 Tbsp Pumpkin butter, 1/2 banana, 2 strawberries, 1/2c raspberries, 1/4c vanilla yogurt, 4 pecans and 1 Tbsp sugar free syrup. Strange concauctions I know...but dare to try it....so yummy!
I had 4 dried apricots...

I had 6 grain first crackers each w/1 Tsp Roasted red pepper humus...
Dinner was 1c wild rice, w/ teriyaki veggie stirfry w/tofu and cashews.

28 Pringle Select...

A light hot chocolate w/light whip cream and chocolate sprinkles.

Last night hubby and I rented Food Inc. I thought it was very informative and interesting and I would highly recommend seeing it. I think we should all know where our food comes from right from start to finish and what we are truely eating. I wouldn't rate is as high as Earthlings, but it's not the same type of movie....I know.....watch both!!











We're not sure what we are up to today...we may go see the movie "The Box" with my mom, or hubbys parents may be coming down for a visit..

Friday...oh how I love the weekends....

No food pictures for the last few days...camera was out of batteries...I didn't really eat any "meals" anyway, I just snacked every couple hours as we were so busy. I did attempt cooking some veg.cabbage rolls we had bought at the farmers market, for dinner but eck! I didn't like the at all! I ended up eating a bowl of cereal and toast w/cream cheese. I also tried making some quinoa stuffed squash, but my quinoa wouldn't fully expand...not sure what I did wrong?? I put 2c broth w/1c quinoa brought to boil and let simmer about 15min...nothing....30min still whole grain....anyone know what I did wrong?? Help!! LOL

Here are some recent eats:














2 whole wheat waffles, 1.5 Tbsp almond butter 1 Tbsp sugar free jam,
1 banana, 1/4c vanilla yogurt, drizzle sugar free syrup. 1/2c Raspberries.
Mmmm!













1/2c diced orange pepper, onions, 1 sm.zucchini, green beans
1/2c Romano beans, 1/2c brown rice, 1/2c veg. broth. 4 Tbsp salsa ,cottage cheese.

Tomorrow is going to be a busy day and hubby has to work, but has taken off Mon, Tues, and of course Wed. is Rememberance Day. Looking forward to a few days of relaxing, and hoping to do somemore cooking and freezing.

Working on getting my water in today. Feeling really tired and lazy. Probably TOM. Ugh...
I'm glad the week is coming to an end. Fingers crossed that WI is good. I haven't peeked. No point while gross and bloated, I would only be disappointed.
